One of my family’s favorite places to eat when we are out of town is the ‘Olive Garden.’ Though their recipes are hard to duplicate I think I have a close match to their amazing Chicken Marsala! The chicken is packed full of flavor and the sauce has that perfect balance of taste and texture. I hope you enjoy this one just as much as my family did.
You will need:
• ½ cup flower
• 2 tsp salt
• ½ tsp black pepper
• 2 pounds thin sliced chicken breasts
• 2 Tbs olive oil
• 8-12 oz fresh mushrooms sliced
• 2 cups Marsala wine
• 2 cups chicken broth
• 2 tsp basil leaves
• 2 tsp marjoram leaves
• 2 tsp onion flakes
• 2 tsp dried minced garlic
• Fresh parsley for garnish
Instructions:
• Mix flour, salt, pepper, marjoram, onion, and garlic in a shallow dish.
• Reserve 2 tablespoons of flower mixture.
• Coat chicken with flour mixture
• Heat 2 tablespoons of the oil in a large skillet on medium high heat.
• Add chicken and cook 3 minutes on each side, or until lightly browned, remove from skillet; keep warm
• Wisk to combine chicken broth and reserved mixture; add to skillet.
• Stir in wine and remaining spices; bring to a boil.
• Reduce heat to low and simmer for 5 minutes.
• Serve with your favorite veggie, pasta, or rice and enjoy!
